How Chefs Taste, and Why Amateurs Rarely Do

A professional cook will spit a mouthful of soup straight back into the spoon without embarrassment, then reach for the salt.

That small, unlovely ritual is the whole difference between tasting and merely eating.

Chefs taste constantly, at every stage, because a sauce is not a fixed object but a moving target.

A home cook in an apron finally sipping from a spoon over a finished pot at a tidy domestic stove, eyes widening in dismay as the plated dinner sits ready on the table behind, evening light through the window.

The amateur, by contrast, tends to taste once, usually at the end, when nothing can be done.

A chef tastes with a question in mind: is it salty enough, sharp enough, deep enough, and if not, which is missing?

Diagnosis requires vocabulary, and this is where most home cooks are quietly stranded.

They sense that something is wrong, yet they lack the words to name the deficiency, so they add more of everything.

A tidy overhead arrangement of four small bowls on a slate counter, each holding a lemon wedge, coarse salt, a knob of butter and a glowing ember, labelled like a laboratory experiment under cool clean light.

Professionals have been trained to isolate variables: acid brightens, salt amplifies, fat rounds, and heat conceals.

They also taste dishes cool, since a scalding spoonful flatters almost anything and forgives a multitude of sins.

Perhaps most importantly, a chef tastes without hope, having abandoned any expectation that the dish will be good.

The amateur, having spent an hour on dinner, is emotionally invested and therefore the least reliable judge in the kitchen.
