Seven of them do the bulk of the damage, and each one is easier to unlearn than to defend.
Crowding the pan is the usual culprit, because escaping moisture has nowhere to go and your steak quietly steams instead of searing.

Give each piece a margin of empty metal and the very same pan produces a crust worth photographing.
Impatience with preheating comes a close second, since food dropped into a lukewarm pan absorbs the oil rather than browning in it.
Salt sprinkled on at the table merely decorates the surface, whereas salt added early travels inward and seasons the food itself.
