Why Bread Rises, and What Makes It Collapse

A loaf of bread is, in the most literal sense, a fossil of trapped breath.
What lifts it, and what betrays it, comes down to a quiet negotiation between gas and structure.
Yeast, given flour and water, sets about devouring the [dough's] simple sugars and exhaling carbon dioxide as it goes.

That gas does not create bubbles so much as inflate the microscopic ones already folded in during mixing.
Whether those bubbles hold depends entirely on gluten, the stretchy protein web that kneading coaxes out of wheat.
Think of it as thousands of tiny balloons, each one only as reliable as the film enclosing it.
Fermentation also builds flavour, which is why a slow, cool overnight rise tastes so much deeper than a rushed one.

The most dramatic growth, though, happens in the oven, in a surge bakers call oven spring.
Heat makes the trapped gas expand, water flashes to steam, and the loaf leaps upward before its crust sets.
Collapse, by contrast, is almost always a matter of timing rather than ingredients.
Push fermentation too far and the gluten, stretched past its tolerance, simply surrenders; The gas escapes and the dome sinks into a crater.

Slicing a loaf while it is still hot has a similar effect, since the crumb has not yet finished firming.
Bread, then, rewards patience with lift and punishes impatience with a sigh.
Get the timing right and the loaf will do the rest of the work for you.
